Ingredients
- 1/2 cup Ketchup
- 1 teaspoon Soy Sauce
- 1/3 cup White Vinegar
- 16oz Canned, Unsweetened Pineapple Juice (Pineapple chunks reserved)
- 1 1/2 cup Palm or Coconut Sugar (White sugar may be substituted)
- 2 tablespoons Cornstarch
Directions
Step 1. | In a large saucepan over medium heat, combine the ketchup, soy sauce, vinegar, and palm sugar. Whisk together until smooth, and bring to a boil for 2 minutes. |
Step 2. | Pour the juice from the canned pineapple into a measuring cup, and top with water to reach 3/4 of a cup of liquid. Mix the cornstarch into the pineapple juice and water, blending until smooth. |
Step 3. | Whisk the cornstarch mixture into the saucepan to thicken, and simmer, stirring frequently, until the mixture thickens and no longer tastes chalky from the addition of the starch. |
Step 4. | Add the chunks of pineapple to the sauce if desired. Serve over Sweet & Sour breaded chicken or pork, or with meatballs. |
