Eggcellent Summer Salads from Egg Farmers Ontario

I don’t know about anybody else, but here in Ontario, August is always the hottest time of the year. Heating up the kitchen with the oven? Ain’t nobody got time fo dat. 

Eggs are a huge staple over in my household. In baking, I constantly use them as the universal binder and leaven-er that they’re so awesome at (I’m sure you’ve noticed, right?).  But also, eggs are one of my son’s favourite foods–and a good thing too. A single egg contains about 5% of an adult’s daily recommended intake of calcium, and while most people don’t have to worry about their calcium sources, my son’s dairy and nut allergies require to get his mostly from plants, soy, and mineral supplements. So a breakfast of scrambled eggs and spinach puts him well on his way.

For vegetarians and everyone else, in a world where meat is becoming ever more costly, the egg is an extremely protein and nutrient dense food that comes at an extremely affordable price–even when labeled free-range and organic.

The Egg Farmers of Ontario have two delicious salad recipes this summer to help you keep cool in the kitchen, too. These two egg-cellent recipes (and this is my blog and I can use eggs-traordinarily bad egg puns if I want to) toss together in a snap, keep the kitchen cool, and are eggs-actly the tasty, fast and healthy dinner you’re looking for after you’ve spent the day running around, or you need a fancy plate to impress your relatives for brunch.

    We go through at LEAST 3 dozen eggs a week in our house – mm, soo good, it’s hard to pick a favourite dish! I’d probably have to go with Quiche, but Apple Egg Bake is always a fave here for breakfast, lunch, or dinner (http://youpinspireme.ca/christmas-morning-breakfast-super-apple-bake/)…

    Hard boiled on a salad. Had it for lunch. In this house, we don’t reserve no-cooking only for Summer 🙂

    I like them nuked in the microwave..soft for eating or hard boiled for eating or added to something else. 🙂

    I love eggs! I serve them scrambled, poached, fried in my rice, sliced in my salad, in my egg sandwiches, sunny side up and more!

    I scramble eggs and vegetables and serve them on a hot tortilla shell with lots of hot sauce.

    Quite frankly, I don’t think there are enough egg puns in this post.

    im so simple. I love them fried sunny side up with some side toast, bacon and a glass of OJ
