It’s been crazy here on the home-front, what with Christmas coming, articles to write, and an increasing push into trying to make connections within my community. On top of everything, we’ve got early snow! I spent a good 20 minutes out in my driveway shovelling the few inches that dumped on us overnight.
I came in, got my slice of apple bread and my morning cup of tea, and settled in by the fireplace to unthaw with my book. I just wanted a few minutes of “me” time.
I’ve made this recipe a few times now. It’s fab for a quick fix: sweet and tasty, a great low-key dessert bread or breakfast treat.
I think I’m going to make some mini loaves and give it away for Christmas presents.

- 1 large, semi-tart apple, peeled, cored & cubed (or 1 1/2 - 2 smaller)
- 1 1/2 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon coarse salt
- 1/2 cup light oil
- 2 eggs
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/2 cup white sugar
This bread is moist and should be stored in the refrigerator if not consumed within a couple of days.
|Step 1.||In a bowl, combine the eggs, oil, cinnamon, and sugar until smooth. In a second bowl, combine the flour, baking soda, and salt.|
|Step 2.||Blend the flour into the wet ingredients until incorporated, and fold in the apple pieces.|
|Step 3.||Pour the dough into a greased 9'x5' loaf pan and bake at 350F for 1 hour. Remove from pan and cool completely before storing.|
